Vanilla and Pear Chopped Bread Pudding with Condensed Milk Sauce

Vanilla and Pear Chopped Bread Pudding

  1. Preheat the oven to 180°C and grease a pie dish.
  2. Lightly butter the bread on both sides.
  3. Roughly cut the bread into cubes and loosely arrange in the pie dish with the chopped pears, flaked almonds and the chocolate drops.
  4. Place the milk, cream, castor sugar, vanilla extract and ground nutmeg into a mixing bowl.
  5. Add the eggs and whisk to combine. Pour the milk mixture over the bread mixture.
  6. Drizzle the golden syrup over the pudding and sprinkle the sugar over the top.
  7. Bake for 35 – 45 minutes, or until the centre is just set and the top is golden and crispy.
  8. Serve with the Condensed Milk Sauce.

Condensed Milk Sauce

  1. Place the condensed milk in a pan, and gently heat.
  2. Stir in the custard and cream. Simmer for 2-3 minutes.
  3. Serve warm with the Vanilla and Pear Chopped Pudding.
