Brie, Cranberry and Caramelized onion Pan-fried Sandwiches

  1. Heat the oil and butter in a pan and gently fry the onion, over a very low heat for 10 – 12 minutes, until softened.
  2. Stir in the sugar and vinegar. Increase the heat and cook for 3-4 minutes.
  3. Season with salt and pepper and set aside.

Pan-fried Sandwiches

  1. Butter the 4 slices of bread on one side. Place 2 slices of bread, butter-side facing down onto a chopping board.
  2. Build a sandwich on each half starting with a layer of cranberry sauce or berry jam, then some slices of brie cheese.
  3. Top with some crispy cooked bacon, if using, and some of the caramelized onions.
  4. Top with the remaining bread, butter side up, and fry in a pan over a medium heat for 3-4 minutes per side, or until the sandwiches are golden and toasted and the cheese has just started to melt. Alternatively cook the sandwiches in a toasted sandwich maker.
