- Heat the oil and butter in a pan and gently fry the onion, over a very low heat for 10 – 12 minutes, until softened.
- Stir in the sugar and vinegar. Increase the heat and cook for 3-4 minutes.
- Season with salt and pepper and set aside.
Pan-fried Sandwiches
- Butter the 4 slices of bread on one side. Place 2 slices of bread, butter-side facing down onto a chopping board.
- Build a sandwich on each half starting with a layer of cranberry sauce or berry jam, then some slices of brie cheese.
- Top with some crispy cooked bacon, if using, and some of the caramelized onions.
- Top with the remaining bread, butter side up, and fry in a pan over a medium heat for 3-4 minutes per side, or until the sandwiches are golden and toasted and the cheese has just started to melt. Alternatively cook the sandwiches in a toasted sandwich maker.
