For the sugared almonds:
- mix together icing sugar and almonds with a little water until nicely coated.
- Bake in an 180C oven for 15 minutes or until the almonds are golden and crusty.
- Allow to cool and chop to desired size.
For the French toast:
- Combine the eggs, cream, sugar and cinnamon together.
- Dip in your bread and fry until golden in a medium pan sprayed with cooking spray.
To assemble toastie:
- Place 1 slice toast on plate, spread with caramel and top with sliced banana.
- Then spoon on cream and chocolate sauce.
- Repeat twice and then finish with chopped almonds.
