Pecan Pie Bread Pudding

  1. Preheat the oven 180C.
  2. Grease a 22.5cm x 30cm oven dish
  3. Mix toghether the eggs, milk and cream.
  4. Pour over the bread and allow to soak for 10 minutes.
  5. Pour the bread mixture into the greased dish.
  6. In a saucepan, melt the butter, brown sugar, syrup and pecans.
  7. Add the vanilla.
  8. Cook for 5 minutes or until the sugar is dissolved, then pour over the bread.
  9. Cover with foil and bake for 30 minutes, then take off the foil and bake for a further 25 minutes.
  10. Serve with pouring cream.
